Process To Make Nonalcoholic Wine:

The wine flows along a porous cylindrical double membrane. Because the liquid is directed along the membrane, rather than through it, very high pressure and very small pores can be used. Since alcohol and water are the smallest molecules, they pass through the membrane, and flow away into a separate tank. None of the flavor or color components are removed, only the water and alcohol.

The Wine Is Then Filtered:

between ten and twenty times resulting in a syrupy, flavorful concentrate. Finally, pure, fresh water is mixed back into the concentrate. The result is a superb dealcoholized fermented beverage that retains the delicate bouquet and complex flavor of regular wine but contains only one-half of one percent of alcohol and fifty percent fewer calories.
